Healthy Peach Popsicle

I'm usually pretty good about making healthy eating choices throughout the day, but when it comes to around 9:00 my willpower goes out the window and I end up scouring the cabinets to find something sweet (which is always unsuccessful because we never have junk food...for the very reason that my willpower cannot be trusted).  So, I have been trying to find a few healthier dessert options to satisfy my sweet tooth at night.  Since the weather is starting to warm up I decided to take a breakfast smoothie I love and tweak it into a tasty late-night snack.  It's just sweet enough to curb my craving, and doesn't make me feel guilty.

Peach Popsicle Ingredients

INGREDIENTS

1/2 cup 0% fat greek yogurt
1/2 cup orange juice
1 banana
2 cups frozen peaches
1/2 tsp vanilla extract
1 tbsp honey

Peach Popsicle

INSTRUCTIONS

Add the ingredients to your blender, liquids first.  Blend it up until its nice and smooth.  It will be pretty thick so use a spatula to help you scrape the mixture into the popsicle molds.  I used a butter knife to get all the air bubbles out of the molds and to make sure they were filled up all way.  Let them freeze 3-4 hours, when you are ready to eat them run them under warm water for a few seconds to help get them out of the molds.  Serves 4 people with 110 calories per serving, depending on the size of your popsicle molds.  Enjoy!

P.S. If you want my smoothie recipe before I transformed it into a dessert, just take out the honey and vanilla and add a handful of spinach!  Serves 2.
